  1. Rinse the chicken pieces thoroughly, then rub with a little salt. Let them rest for 15 minutes to allow the salt to penetrate and remove any unpleasant odor.
  2. Heat oil in a wok or deep pan over medium heat. Sauté the shallots, garlic, ginger, lemongrass, and bay leaves until fragrant and the shallots and garlic turn golden brown.
  3. Add the chicken pieces into the pan. Stir well and cook until the chicken changes color and the surface is fully coated with the aromatics.
  4. Add the chopped tomatoes, cloves, cinnamon stick, ground white pepper, ground nutmeg, salt, and chicken bouillon powder. Stir again to combine and allow the spices to begin releasing their aroma.
  5. Pour in the sweet soy sauce. Stir quickly until all chicken pieces are evenly coated in a rich, dark brown glaze.
  6. Add water until the chicken is partially submerged. Reduce the heat to low and simmer slowly until the chicken is tender and the sauce has thickened and reduced. Stir occasionally to prevent the bottom from burning.
  7. Once the sauce has reached your desired consistency and the spices have fully infused into the meat, remove from heat. Transfer to a serving plate and top generously with fried shallots.
