Spice Paste (Bumbu Halus):
- 10 red bird’s eye chilies (adjust to spice preference)
- 10 curly red chilies
- 8 shallots
- 5 garlic cloves
- 3 candlenuts (kemiri)
Instructions
- Rinse the fish thoroughly, rub with lime juice, and let it sit for about 10 minutes. Rinse again.

- Add whole chilies and Thai basil, if using.
