  • Beef tendon (kikil) is the star of the dish. It requires patient boiling with aromatics like lemongrass and bay leaves to become tender and odor-free. Once cooked, its dense, gelatinous texture becomes the perfect vehicle for absorbing all the bold seasoning that follows.
  • Kecap manis (sweet soy sauce) gives oseng kikil its signature flavor. Added generously during the stir-fry stage, it coats the tendon in a glossy, caramelized sweetness that balances the heat from the chilies and brings the whole dish together with depth and richness.
  • Chilies, a combination of red chilies, green chilies, and bird’s eye chilies, provide the fiery backbone of the dish. Together they create a layered heat that builds gradually, complementing the sweetness of the soy sauce and the savoriness of the aromatics.

Ingredients

Main:

  • 200–300 g beef tendon (kikil), thinly sliced
  • 8 shallots
  • 4 garlic cloves
  • 10 red and green chilies
  • 10 bird’s eye chilies, to taste
  • 1 stalk lemongrass, bruised
  • 3 bay leaves
  • 2 cm galangal, bruised
  • 1 tomato, sliced
  • ¼ tsp salt
  • ½ tbsp seasoning powder
  • â…› tsp ground pepper
  • 5–8 tbsp sweet soy sauce (kecap manis)
  • Cooking oil, as needed

For boiling the tendon:

  • 1 stalk lemongrass
  • 3 bay leaves
  • 1 tsp salt
  • 1 tsp seasoning powder
  • Water, as needed

Instructions

  1. Clean the beef tendon and slice thinly. Boil with lemongrass, bay leaves, salt, and seasoning powder until the tendon is tender and any strong smell is gone, about 5–10 minutes. Drain and set aside.
  2. Slice the shallots, garlic, red chilies, green chilies, and bird’s eye chilies. Set aside.
  3. Heat oil in a pan over medium heat. Sauté the shallots, garlic, and chilies until fragrant and softened.
  4. Add the lemongrass, bay leaves, galangal, and tomato. Stir until the tomato softens and the aromatics are fully cooked.
  5. Add the boiled tendon and stir until evenly combined with the aromatics.
  6. Pour in a little water, then season with salt, seasoning powder, ground pepper, and sweet soy sauce. Cook while stirring until the seasoning is fully absorbed and the liquid reduces.
  7. Adjust seasoning to taste, remove from heat, and serve.
